Best Buddies blog
It's December!
Welcome to our last newsletter for 2021.

Here at Best Buddies we had a great time full of adventures, fun and lots of achievements!
Time flies! I cannot believe this is my final post, but we are already starting 2022 off with a bang!

Our New School!
Our latest project is building our new school to accommodate our current kids and to give them their very own, very big classrooms. We are renovating and adding onto our original structure with 4 new additional classrooms, new offices and even more sufficient bathrooms.

Our New Classes!
We are proud to announce our new remedial class – lovable lambs, where we will be accommodating Buddies with a bit of a developmental delay. We will also be applying for our very own grade R class, and if everything gets approved, we will be starting in 2023.

Time2gether
Time2gether will also be joining Best Buddies at our new upgraded school and will have their own dedicated classroom and play area!

Our New Home away from Home
With all these new developments, Best Buddies will be ready to move into our new Home away from Home soon. I will keep you updated every step of the way!

Thank You!
I want to thank everybody for their love and support, we really appreciate all our parents, teachers and fellow colleagues who offer extra mural activities at Best Buddies. I wish you all a wonderful festive season and a very merry Christmas.

See you all in the new year of 2022!

It’s Recipe Time Again:

Frozen Christmas Pudding Cake
Put down the hot brandy sauce. Boring old Christmas puddings are out this year! Create a more updated pudding that is perfect for our South African summer!
This is my basic recipe, but you can change your choice of ice-cream and fruit to any combinations you like.
Ingredients
1kg Christmas pudding, crumbled
6L vanilla ice cream, softened
2 cups (400g) cherries in syrup, drained, chopped, plus 2/3 cup (165ml) syrup
Chocolate shards & fresh cherries, to decorate
Instructions
Grease and line base and sides of a 22cm springform cake pan with baking paper.
Press 400g pudding into base of pan. Spread 2L ice cream over, then cover with remaining 600g pudding, pressing gently to flatten.
Freeze for 2 hours or until firm.
Meanwhile, fold the chopped cherries and syrup through the remaining 4L ice cream. Transfer to a plastic container, then cover and freeze, stirring occasionally so the cherries don’t sink to the bottom, for 2-3 hours until just firm.
Using duct tape, secure the ring only (do not use base) of a second 22cm springform cake pan to the first pan to form a two-tier mould. Spread cherry ice cream over the pudding, then cover with plastic wrap and freeze overnight.
The next day, unmould cake by rubbing a hot cloth around pans. Release top pan first, then bottom. Transfer to a serving plate and freeze until ready to serve.
Decorate with chocolate shards and fresh cherries to serve.
